Lime Jello Salad


1 package lime Jell-O

1 cup hot water

1/2 pint whipping cream or 1 cup cool whip

1 cup cottage cheese

1 cup crushed pineapple (small can)

1 cup miniature marshmallows

 Dissolve Jell-O in hot water. Let cool. Fold in whipped cream and then add the remaining ingredients.


Metta Walker’s Gumdrop Fruit Cake


1 cup butter or oleo

2 cups sugar

2 eggs beaten

1/4 teaspoon nutmeg

1/4 teaspoon cloves

1/4 teaspoon salt

1 1/2 cups applesauce

1 tablespoon butter or oleo

1 1/2 pounds gumdrops (no black ones)

1/4 to 1/2 package of orange slices

1 pound of raisins

4 cups sifted flour

1 teaspoon soda

1 tablespoon hot water

1 teaspoon vanilla

1 teaspoon cinnamon

1 cup chopped pecans

 Cream butter and sugar. Add beaten eggs and mix thoroughly. Sauté pecans in a little bitter and add to gumdrops and raisins. Sift flour, cinnamon, nutmeg, cloves and salt together.

Remove 1/2 cup flood and add to raisins, nuts and gumdrops. Add dry ingredients to butter and sugar mixture alternately with applesauce.

Dissolve soda in hot water and stir I’m mixture. Add vanilla and floured fruits. Grease and line 2 or 3 small loaf pans with waxes paper and grease again. Bake in 300 degree oven for 2 or 2 and a half hours depending on the size of the pan.

Mmmm, very delicious!


Gertie Miller’s Pineapple Cream Pie


3 tablespoons corn starch

1 1/2 cups sugar

3 cups sweet milk

4 eggs, separated

Large can 20 oz. crushed pineapple, drained

 Cook all ingredients but pineapple until thick, then add pineapple and mix well. Beat egg whites until stiff, add 1/2 cup powdered sugar to egg whites and whip more until mixed well. Put on top of pie and brown.


Coconut-Apricot Balls


1 8 oz. package dried apricots

2 cups coconut

2 cups chopped pecans

1 can eagle brand milk

 Chop apricots fine and combine the above ingredients. Make small balls and roll balls in coconut (use additional coconut for this).


Nadine’s Apple Dumplings


1 quart peeled and sliced apples

3/4 cup sugar

1/2 cup butter

 Sauce ingredients

2 cups milk

1/4 teaspoon nutmeg

2 tablespoons flour

1/3 cup sugar

1 teaspoon cinnamon

 Crust ingredients

1 1/2 cup flour

1/4 cup cold water

1/2 cup crisco

1/2 teaspoon salt

 Roll pie crust to a large rectangle. Mix apples, sugar and butter and spread evenly over crust. Roll jelly roll fashion.

Slice 1 1/2 inches thick and place in 8x9 inch pyrex baking dish. Bake at 350 degrees for 45-50 minutes.

To make the sauce, mix sugar, flood and spices. Add milk and heat to boiling, but do not boil. Pour hot sauce over hot apples. Let stand 30 minutes.


Banana Nut Cake


1/2 cup margarine (1 stick)

1 1/2 cups sugar

2 eggs, beaten

2 cups flour

1 teaspoon soda

1/2 teaspoon salt

3 mashed bananas

4 tablespoons buttermilk

1 teaspoon vanilla

1/2 cup pecans

 Cream the margarine. Add sugar and cream together until light and fluffy.

Add beaten eggs and stir in mashed bananas. Sift soda and salt with flour. Alternately add flour and buttermilk.

Add pecans and vanilla. Bake at 325 degrees for 25 minutes.
